蛋黃

蛋黃(英文yolk或者egg yolk),有部份人認為正字係𪏙,係蛋裏面部份,用來供養蛋內嘅胚。蛋黃掛喺蛋白入面,有一到兩條帶吊住,呢啲帶就叫卵帶。蛋未受精嗰陣,胚盤連蛋黃,係單細胞,係少數人眼睇得到嘅單細胞。如果蛋受咗精嘅話,蛋黃外層會有朕白色嘢;如果冇受精就冇。
蛋可以畀人食。蛋黃維他命豐富,礦物質都多。成隻蛋嘅脂肪同膽固醇,都喺囇蛋黃度。蛋白質方面,蛋黃亦佔全蛋五分一。
蛋有唔同煮法。如果純綷煎蛋,唔攪散佢,蛋黃就喺一塊白色中間,好似太陽咁,叫太陽蛋。如反一反佢,有朕蛋白包住,唐人叫佢荷包蛋。如可將蛋發勻,蛋白蛋黃撈勻,就會變淺黃色,好似炒蛋同奄列咁。
雙黃蛋
編輯之所有雙黃蛋,係排卵過快,或者係一隻蛋黃黐咗埋另一隻度。如果鷄乸來講,呢種情況多數係鷄乸太嫩,生蛋周期未同步 [1]。有啲雜種鷄,生親都係雙黃蛋。多數鷄乸都唔會生雙黃蛋,但有啲係遺傳係咁,會生雙黃蛋。
雙黃蛋一般會長啲,又會單薄啲。雙黃蛋通嘅鷄仔,通常都出唔到世,因爲未出世,兩隻就打生打死。除非係有人干預啦[2]。
