組胺酸脫羧酶(學名histidine decarboxylase,減筆HDC)係一種,佢夾埋維他命乙,將組胺酸轉成組織胺二氧化碳[1][2][3]。過程如下:

人嘅遺傳基因當中,收埋咗造組胺酸脫羧酶嘅圖樣。 [4][5]

生理上,組織胺係隻重要嘅神經傳遞neutrotransmission),胃酸分泌,平滑肌舒張,都係靠佢。要有組織鞍,就要靠左旋組胺酸脫羧酶( L-histidine decarboxylase),將組鞍酸化成組織鞍。[4]

組織胺亦負責擴大組織通道,畀白血球過去打仗。如果組織胺太多,就會襲擊身體各處發炎,即係敏感症好似哮喘濕疹。其中一個醫法,就係唔畀組胺酸脫羧酶造咁多組織胺。例如食五羥黃酮嘅嘢,係制呢隻酶。

生嘅有唔少組胺酸,如果無住,佢周圍嘅組胺酸脫羧酶,就發揮功用,將佢哋變成組織鞍。人食咁多組織鞍,就打亂身體反應,就好似過敏症,中晒毒咁。有啲魚肉零舍多組胺酸,唔過唔可以做魚生
